Kaupallinen yhteistyö The Good Guys:n kanssa
Oon viime aikoina innostunut juomaan kombuchaa, kuten oon aiemminkin täällä maininnut. Saunajuoma varsinkin on vaihtunut nykyään alkoholituotteista kombuchaksi, jossa on vähän samanlainen suutuntuma käymisprosessin vuoksi. Kombuchahan on siis käymisteitse teestä valmistettu vähähappoinen luomujuoma. Sopii myös meikäläiselle, joka ei muuten kestä yhtään hiilihappoja!
Varsinkin nyt poikkeusaikaan tekee mieli kokeilla kaikkia diy-juttuja ja kaupasta ostamisen sijaan tehdä asioita itse. Kuulin, että kombuchan valmistamiseen tarvittavan scobyn avulla juomaa pystyy tekemään itse loputtoman määrän – ja pakkohan sitä oli itse päästä kokeilemaan.
Sain The Good Guysilta käyttööni Kombucha Starter kitin, joka sisältää kaiken tarpeellisen kombuchan valmistamisen aloittamiseen (okei, kattila pitää olla omasta takaa ja vedet ottaa hanasta, mutta muuten). Oli mahtavaa päästä tekemään yhteistyötä suomalaisen yrityksen kanssa, joka tuottaa luonnonmukaista juomaa. Kotimaisuus ja ekologisuus samassa paketissa, kuinka hyvin voikaan sopia mulle.
Pakkauksessa tulee mukana scoby, lasiastia lämpömittarilla, luomuruokosokeria, vihreää ja mustaa teetä, haudutuspusseja, startterineste, kangasliina ja naru. Kynnys aloittamiseen madaltui ainakin itselle huomattavan paljon, kun ei tarvinnut metsästää tarvikkeita eri paikoista.
Miten kombuchaa sitten tehdään? No, tässä koko prosessi niin yksinkertaisena ja simppelinä kuin vain osaan sen selittää.
KOMBUCHAN VALMISTUS
1. Kiehauta noin litra vettä kattilassa ja sammuta liesi.
2. Lisää 15 grammaa irtoteetä haudutuspusseissa kattilaan ja anna hautua 20 min.
Tämän voi varmaan toteuttaa myös teepusseilla. Irtotee kannattaa jakaa vähintään kahteen haudutuspussiin, jos pussit ovat pieniä.
3. Poista teet ja lisää sokeri. Sekoita niin, että sokeri liukenee veteen.
4. Lisää noin 1,7 litraa kylmää vettä lasiastiaan.
5. Kaada sokeroitu tee lasiastiaan. Testaa, että nesteen lämpötila on alle 30 astetta.
Starter kitin mukana tulevassa lasiastiassa on kyljessä lämpötilamittari. Oikea lämpötila vaihtaa väriä. Jos neste on yli 30 astetta, anna jäähtyä ja sekoittele välillä. Tässä voi mennä pidempikin aika.
6. Lisää scoby sekä pussissa oleva noin 3 dl startterinestettä lasiastiaan.
Startterineste tulee mukana Starter kitissä, ja scoby on startterinesteen kanssa samassa pussissa. Niiden saaminen pois lasiastiasta osoittautui hankalasti, mutta puhkaisemalla pienen reiän uloimpaan pussiin ilmaa lähti pois ja astiasta poistaminen onnistui. Jos sinulla ei ole ennestään yhtään kombuchaa, lisää tässä vaiheessa vain scoby.
7. Sido hengittävä kangasliina tai talouspaperi lasiastian päälle narulla.
Tämä estää banaanikärpäsiä ja muita ötököitä menemästä kombuchaan.
8. Sijoita lasipurkki lämpimään ja pimeään paikkaan tekeytymään. Hyvä lämpötila on 22-29 asteen välillä.
9. Anna käydä 7-14 päivää. Maistele kombuchaa silloin tällöin esimerkiksi pillillä scobyn alta. Pidempi käyminen tekee mausta etikkamaisemman ja lyhyempi jättää enemmän makeutta.
Tässä vaiheessa poikkesin ohjeesta, sillä en kertaakaan maistanut kombuchaa. Tiesin tykkääväni enemmän makeammasta lopputuloksesta, joten annoin kombuchan käydä 8 vuorokautta.
10. Kun maku on mielestäsi miellyttävä, poista scoby lasiastiasta ja ota 3 dl kombuchaa talteen pieneen astiaan seuraavan erän valmistamista varten. Jaa loppu kombucha esimerkiksi lasipulloihin maustamista varten. Kombuchaa ei ole pakko maustaa, jos tykkää siitä jo sellaisenaan.
Scobyn voi poistaa puhtailla käsillä. Scoby tuntuu limaiselta ja siitä on vaikea saada otetta. Älä säikähdä, jos scobyn päällä on valkoinen, ohut kerros, vaan heitä epämääräinen osa bioroskiin. Me säilöimme scobyn ja kolme desiä juomaa tupperwaren astiaan, jota säilytämme astiakaapissa. Lasipurkki toimisi tähän myös hyvin, mutta valitse tarpeeksi iso astia, jotta scoby mahtuu sinne hajoamatta.
Luulin kombuchan valmistamisen olevan huomattavasti vaikeampaa, mutta tähän mennessä läpikäydyt vaiheet eivät olleet juuri tavallista kahvinkeittoa kummallisempia. Positiivinen yllätys oli myös valmistumisen tapahtuvan huoneenlämmössä, sillä jääkaappiin ei tarvinnut raivata tilaa astiaa varten.
Maustaminen olikin sitten taas oma vaiheensa, joten mennään sen ohjeisiin. Maustaa voit periaatteessa millä tahansa päähän pälkähtävällä ruoka-aineella. Pilkotut hedelmät, yrtit ja inkivääri ovat tyypillisiä mausteita. Paljon sokeria sisältävä mauste herättää hiivat uudestaan ja kombuchan maku saattaa muuttua ja hiilihappojen määrä kasvaa. Täältä löydät esimerkkireseptin maustamiseen.
KOMBUCHAN MAUSTAMINEN
1. Laita kombucha lasipulloon, jonka kannen saa suljettua.
2. Lisää haluaamasi maustetta pulloon ja sulje pullo tiiviisti.
Me kokeilimme laittaa kahteen pulloon appelsiineista puristettua ja yhteen sitruunasta puristettua mehua.
3. Avaa korkki kerran päivässä, jotta pulloon kertynyt paine pääsee ulos. Tämä on erittäin tärkeää, sillä pullo saattaa haljeta tai korkki vioittua liiasta paineesta. Pullon avaus kannattaa tehdä tiskialtaan päällä, sillä nestettä voi vaahdota ja roiskua paljon.
Oma kokemus: Pullot vaahtoavat todella paljon. Jokaisesta pullosta lähti lopulta melkein puolet sisällöstä pelkän vaahtoamisen vuoksi. Avaus todellakin kannattaa tähdätä tiskialtaan pohjaan ja varautua siitä huolimatta hinkkaamaan lähimpiä kaakeleita puhtaaksi. Me avasimme pullot kaksi kertaa päivässä, ja siitä huolimatta kävi onnettomuus: yksi pulloista räjähti omia aikojaan kahden vuorokauden jälkeen keskellä yötä.
4. Anna kombuchan maustua 1-7 vuorokautta ja siirrä pullo jääkaappiin, kun maku ja hiilihappojen määrä ovat mielestäsi hyvät. Nauti juomasta!
Annoimme sitruunan makuisen kombuchan maustua kaksi vuorokautta. Toisen appelsiinipullon räjähdettyä yöllä siirsimme viimeisen pullon jääkaappiin.
Lopputulos oli maultaan hyvä! Sitruunan makuinen oli vähän liian kirpeää mulle, mutta appelsiinin makuinen juoma meni äkkiä alas. Harmittaa vähän se yhden pullon räjähdys, mutta ei voi mitään ja onneksi kellekään ei sattunut mitään. Juomat olivat todella eri makuisia kuin kaupasta ostetut kombuchat, mutta mitään muuta en odottanutkaan. Vaihtelemalla käymisprosessin ja maustumisen aikaa saa varmasti aikaan erilaisia lopputuloksia, samoin mausteita vaihtelemalla.
